Other | Rousanne and Grenache Blanc grown on shale/quartz soils; and Chenin grown on sandstone/shale soils. Echalas and trellised vineyards. The vision is to produce a White blend that represents our farm. The Rousanne (55%) and Grenache Blanc (34%) dominate the aromatics of the nose and palate of this wine. The Chenin Blanc (11%) adds layers of fruit and contributes to the complexity. The grapes were separately whole bunch pressed to ensure elegant extraction. Natural fermentation took place in 500L oak barrels (5% new French & 5% new Hungarian) adding layers of complexity. The wine was aged for 10 months on its lees, with some bâtonnage contributing to the freshness and complexity of the wine. |
