Olifantsberg Syrah 2017

Olifantsberg Syrah 2017
This wine delivers a complex array of flavours of red and dark current berries, beautiful sweet aromas of violets layered by hints of liquorice and pepper. The palate has a refined taste with balanced acidity and tannins.

Other | The vineyards are located on the slopes of the Olifantsberg Mountain where they endure big diurnal temperature differences and strong winds. The altitudes of the vineyards range from 250m to 450 metres above sea level. The vineyards are farmed in a sustainable manner, helping to maintain the biodiversity within the vineyards and soils. The majority of our vines are bush vines trained as “sur echalas” - which consists of a bush vine supported by a wooden vertical support. Our Syrah vines are grown on soils consisting of sandstone, clay-shale, schist and quartz. Fermentation with up to 30% whole bunches took place in open top fermenters. The grapes were basket pressed into barrels and foudres. Maturation took place in barrels and foudres (10% new french oak) for a further 10 months. |
